
A multi-unit high-end restaurant chain in California was justifiably concerned about the ongoing ABC compliance risks of serving alcohol to underage minors. They already had been fined and their liquor license had been in jeopardy previously.
A decoy program involving monthly visits by diners whose appearance and demeanor clearly put them in a questionable age category was designed to identify non-compliant servers (those serving alcohol to potentially underage patrons without checking ID.)
Clear guidelines and protocols were established for how to deal with these servers. Our client team also worked with the operations management of the chain to establish procedures and compliance training to avoid repeated problems.
The client has been able to identify the problem servers, and has eliminated ABC fines and risk to their license. Unfortunately, these discoveries have resulted in employee terminations. Mercantile Systems is currently working with them to incorporate the lessons learned into their ongoing hiring, training and management programs.
